Scottish Gin

Scottish Gin is produced from a small 500 litre copper pot still, using vapour infusion with a botanical basket.

Botanicals

Juniper, coriander seeds, angelica root, orris root, calamus root, grains of paradise, orange peel, rose petals & honeyberry.

The Gin

Scottish Gin is a juniper led London Dry style. A smooth, sweet start switches to a light peppery mouth-feel, which is quickly followed by a gentle sherbert finish as the citrus elements develop towards the end. Distilled slowly, giving it smoothness and balance of flavour.

Perfect Serve

Best enjoyed over ice, topped up with your favourite tonic or fresh grapefruit juice. Garnish with a twist of orange, or a slice of fresh pink grapefruit for a deliciously refreshing G&T.


Heather Rose Gin

Heather Rose Gin is produced in two stages, the first being vapour infusion in a 500 litre pot still, using a botanical basket. Once distilled, additional delicate botanicals are combined to add depth of flavour and to enhance the colour.

Botanicals

Juniper, coriander seeds, orange peel, lemon peel, liquorice root, rose petals, and purple heather flowers.

The Gin

Our Heather Rose is a celebration gin, ideal as an aperitif for a special occasion or as an every day treat. With its combination of rose and heather it takes on a Prosecco character and changes to a delicate pink / champagne colour when mixed with tonic. It is fragrant, floral and light, and also sweet yet spicy.

Perfect Serve

In a chilled champagne flute add one shot of Heather Rose, top up with chilled tonic for a champagne replacement.
No garnish or ice required.


Dunedin Rum

Dunedin Rum is produced using traditional methods - sugar cane molasses is slowly fermented in a warm fermenter (to compensate for our lack of Caribbean climate!) and distlled using a matched pair of small, hand-made copper stills.

The Story

Rum has always been enjoyed in Scotland, so much so that at one time it was banned as its popularity slowed the sales of whisky. Dunedin Golden Rum is housed in a unique bottle paying homage to Scotland and Muireadhach (Murdina) the sea warrior.

The Rum

The rum boasts a bold fruity nose, with notes of dark chocolate. Sipping the golden spirit gives a complex blend of sweet vanilla and spicy flavours which give way to burnt sugar and caramel with a rich oaky finish. It is fermented and distilled slowly, giving it smoothness and balance of flavour.

Perfect Serve

Great in cocktails, poured over ice, or with ginger beer or a good cola.
